1 medium zucchini, sliced into half-moons

1 block (14 oz) firm tofu, drained, pressed, and cubed

1 bell pepper (any color), sliced

1 cup broccoli florets

2 cloves garlic, minced

1 inch piece of ginger, grated

3 tablespoons soy sauce (or tamari for a gluten-free option)

1 tablespoon sesame oil

1 tablespoon olive oil

1 tablespoon cornstarch (optional, for added crispiness)

½ teaspoon red pepper flakes (adjust according to spice preference)

2 green onions, finely chopped

Prepare the Tofu: Start by pressing the tofu to eliminate excess moisture, which will help achieve a better texture. After pressing, cut the tofu into 1-inch cubes. For a crunchier finish, you can toss the cubed tofu in cornstarch until each piece is evenly coated.

    Sauté the Tofu: In a large skillet or wok, heat the olive oil over medium-high heat. Once the oil shimmers, carefully add the tofu cubes in a single layer. Sauté for approximately 5-7 minutes, turning the tofu occasionally, until they are golden brown and slightly crispy on all sides. Once cooked, remove the tofu from the pan and set it aside on a plate.

      Cook the Vegetables: In the same skillet, add the sesame oil and heat it until it's fragrant.
