2 cups grated zucchini (approximately 2 medium zucchinis)

1 cup rolled oats

1 cup almond flour (or substitute with whole wheat flour)

1/2 cup honey or maple syrup

1/2 cup unsweetened applesauce

1/4 cup coconut oil, melted

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup dark chocolate chips (optional)

1/2 cup chopped nuts (such as walnuts or pecans) (optional)

Preheat Oven: Begin by preheating your oven to 350°F (175°C). Prepare an 8x8-inch baking dish by lining it with parchment paper, ensuring you leave some overhang on the sides for easy removal later.

    Prepare Zucchini: Use a box grater to grate the zucchini. Once grated, transfer it to a clean kitchen towel and wring it out to eliminate excess moisture. This step is crucial to prevent the bars from becoming soggy.

      Mix Wet Ingredients: In a large mixing bowl, combine the melted coconut oil, honey or maple syrup, unsweetened applesauce, eggs, and vanilla extract. Whisk thoroughly until the mixture is smooth and well blended.

        Combine Dry Ingredients: In a separate bowl, mix together the rolled oats, almond flour, baking powder, baking soda, ground cinnamon, and salt. Ensure that all dry ingredients are evenly distributed.

          Combine Mixtures: Gradually add the dry mixture to the wet mixture, stirring gently until just combined. Be careful not to overmix. Fold in the prepared grated zucchini, along with the dark chocolate chips and chopped nuts (if using), ensuring they are evenly incorporated.

            Bake: Pour the batter into the lined baking dish, spreading it out evenly with a spatula. Place in the preheated oven and bake for 25-30 minutes. The bars are ready when the edges are golden brown and a toothpick inserted into the center comes out clean.

              Cool & Slice: Once baked, remove the dish from the oven. Allow the bars to cool in the pan for about 10 minutes. Use the parchment overhang to lift the bars out of the pan and transfer them to a wire rack to cool completely. Once fully cooled, slice into 12 even bars.

                Store: Enjoy immediately or keep in an airtight container in the refrigerator for up to a week. These bars also freeze well, making them a great option for longer storage!
