2 medium zucchinis

1 cup shredded mozzarella cheese

½ cup marinara sauce

½ cup sliced pepperoni or a mix of diced veggies (bell peppers, mushrooms, onions, olives)

1 teaspoon Italian seasoning

½ teaspoon garlic powder

¼ teaspoon salt

¼ teaspoon black pepper

Fresh basil leaves for garnish

      Season the Zucchini: Arrange the zucchini rounds on a baking sheet lined with parchment paper. Lightly brush the tops of each round with olive oil. Evenly sprinkle the salt, black pepper, garlic powder, and Italian seasoning over them.

        Pre-Bake the Zucchini: Place the baking sheet in the preheated oven. Bake the zucchini for 10-12 minutes until they begin to soften. This helps reduce their moisture, ensuring the final product isn't soggy.

          Add the Sauce: After 10-12 minutes, take the baking sheet out of the oven and allow the zucchini rounds to cool for a couple of minutes. Carefully spoon marinara sauce onto each piece, ensuring an even spread.
