Ingredients

2 medium zucchinis, finely grated

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 cup almond flour

1 large egg, beaten

1 teaspoon garlic powder

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/2 teaspoon freshly ground black pepper

1 cup mini pepperoni slices

1/2 cup marinara sauce (for dipping)

Fresh basil leaves (for garnish, optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). Prepare a baking sheet by lining it with parchment paper or a silicone mat, which will make for easier cleanup after baking.

Prepare the Zucchini: Grate the zucchinis using a box grater until you have a chunky, moist mixture. To remove excess moisture, place the grated zucchini into a clean kitchen towel, twist it closed, and squeeze firmly to extract as much water as possible. This step is essential to ensure your crusts are crispy.

Mix the Ingredients: In a large mixing bowl, combine the drained grated zucchini with the shredded mozzarella cheese, grated Parmesan cheese, almond flour, beaten egg, garlic powder, Italian seasoning, salt, and black pepper. Stir vigorously until all the ingredients are well blended into a thick, cohesive mixture.

Form the Crusts: Using your hands, scoop out portions of the mixture and shape them into mini crusts, aiming for about 2-3 inches in diameter. Place each crust on the prepared baking sheet, gently flattening them to ensure even cooking.

Add Toppings: Top each zucchini crust with a few mini pepperoni slices. Press them gently into the mixture to ensure they adhere during baking.

Bake: Transfer the baking sheet to the preheated oven. Bake for 15-20 minutes, or until the edges of the crusts are golden brown and the cheese on top is bubbly and melted.

Serve: Once baked, remove the zucchini pepperoni bites from the oven and allow them to cool for a couple of minutes on the baking sheet. Serve warm with marinara sauce for dipping. If desired, garnish with fresh basil leaves for an elegant touch.

                Prep Time: 15 min | Total Time: 35 min | Servings: 4-6

                  - Presentation Tips: Arrange the pepperoni bites on a decorative platter and serve the marinara sauce in a small bowl for dipping. Add a few sprigs of fresh basil around the platter for a pop of color.
