Ingredients

4 medium zucchinis

2 cups cooked chicken, shredded (rotisserie chicken works great for ease)

1 cup Romaine lettuce, finely chopped

½ cup Caesar dressing (choose your favorite – store-bought or homemade)

½ cup cherry tomatoes, halved

¼ cup grated Parmesan cheese, divided

1 teaspoon garlic powder

Salt and freshly ground black pepper to taste

1 tablespoon olive oil

Lemon wedges for serving (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

Prepare the Zucchini Boats: Slice each zucchini in half lengthwise. Using a small spoon or melon baller, carefully scoop out the seeds and some of the flesh to form boats, leaving enough thickness for stability.

Season the Zucchini: Brush the insides of each zucchini half with olive oil. Sprinkle garlic powder, and season with salt and freshly ground pepper to taste. Arrange the zucchini boats cut-side up on a baking sheet.

Make the Filling: In a large mixing bowl, combine the shredded chicken, chopped Romaine lettuce, Caesar dressing, halved cherry tomatoes, and half of the grated Parmesan cheese. Stir well to ensure all ingredients are evenly coated in the dressing.

Stuff the Zucchini: Gently fill each zucchini boat with the chicken Caesar mixture, pressing down lightly to pack the filling without overstuffing.

Add Finishing Touches: Top each stuffed zucchini with the remaining grated Parmesan cheese, ensuring it covers the filling nicely.

Bake: Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the zucchinis are tender and the tops are beautifully golden brown.

Cool and Serve: Once baked, remove the zucchini boats from the oven and let them cool for a few minutes.

Enjoy: Serve the warm Zucchini Chicken Caesar Boats with lemon wedges on the side for a zesty flavor boost. Dig in and enjoy this deliciously healthy meal!
