1 cup fresh or frozen blueberries

1 ½ cups all-purpose flour

¾ cup rolled oats

½ cup granulated sugar

⅓ cup packed brown sugar

1 teaspoon baking powder

1 teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

2 large eggs

½ cup unsweetened applesauce

⅓ cup vegetable oil (or melted coconut oil)

1 teaspoon vanilla extract

Optional: ¼ cup chopped walnuts or pecans (for added crunch)

Preheat the Oven: Preheat your oven to 350°F (175°C). Prepare a 12-cup muffin tin by lining it with paper liners or greasing it with non-stick cooking spray to ensure easy removal.

    Prepare the Zucchini: Grate the zucchini using a box grater. To remove excess moisture, place the grated zucchini in a clean kitchen towel, gather the corners, and twist the towel to squeeze out as much liquid as possible. This step is crucial for avoiding soggy muffins.

      Mix the Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, rolled oats, granulated sugar, brown sugar, baking powder, baking soda, salt, and ground cinnamon. Whisk together the dry ingredients until they are evenly incorporated.
