20 large pasta shells

1 lb ground beef (or substitute with turkey or chicken)

1 packet taco seasoning (about 1 oz)

1 cup black beans, drained and rinsed

1 cup salsa (adjust spice level to your preference)

1 cup shredded sharp cheddar cheese, divided

1 cup ricotta cheese

1/2 cup sour cream

1/4 cup green onions, finely chopped

1/4 cup fresh cilantro, chopped (optional)

Salt and pepper to taste

Instructions
 

Cook the Pasta:

            Mix the Cheese Filling:

                Stuff the Pasta Shells:
