2 cups cooked chicken, shredded

1 cup fresh pineapple, diced

1 cup shredded Monterey Jack cheese

1 cup shredded cheddar cheese

1/2 red bell pepper, diced

1/2 green bell pepper, diced

1 small red onion, diced

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon soy sauce

1 tablespoon fresh lime juice

1 teaspoon chili powder

1 teaspoon ground cumin

Salt and pepper, to taste

4 large flour tortillas

Fresh cilantro, chopped (for garnish)

Salsa or sour cream (for serving)

Prepare the Chicken Mixture: In a large skillet, heat the olive oil over medium heat. Once the oil is shimmering, add the diced red onion and minced garlic. Sauté for about 3-4 minutes until the onion is translucent and the garlic is fragrant.

    Add Vegetables and Chicken: Incorporate the diced red and green bell peppers into the skillet, cooking for an additional 2-3 minutes until they begin to soften. Add the shredded chicken, diced pineapple, soy sauce, lime juice, chili powder, cumin, and season with salt and pepper. Stir everything together and sauté for an additional 5 minutes, or until the mixture is heated through.

      Assemble the Quesadillas: Place one large flour tortilla in the skillet over medium heat. On one half of the tortilla, first sprinkle a layer of Monterey Jack cheese. Then, add a generous scoop of the chicken-pineapple mixture, followed by a layer of cheddar cheese. Carefully fold the tortilla in half to encase the filling.

        Cook the Quesadilla: Cook the quesadilla on one side for approximately 3-4 minutes, or until it is golden brown and crispy. Use a spatula to carefully flip it over and cook for another 3-4 minutes on the opposite side until the cheese is melted and the tortilla is golden.
