4 large bell peppers (any color)

1 pound ground turkey

1 cup cooked quinoa (or rice)

1 small onion, finely diced

2 garlic cloves, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1/2 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup diced tomatoes (fresh or canned)

1/2 cup feta cheese, crumbled

1/4 cup Kalamata olives, pitted and chopped

1/4 cup fresh parsley, finely chopped

1 tablespoon extra virgin olive oil

Juice of 1 medium lemon

Preheat the Oven: Preheat your oven to 375°F (190°C) to ensure it reaches the right temperature for baking.

    Prepare the Peppers: Carefully slice the tops off each bell pepper and remove the seeds and membranes. Lightly brush the exterior surfaces of the peppers with olive oil and place them cut side up in a baking dish.
