4 cups seedless watermelon, cubed

3 ripe kiwis, peeled and sliced

1 cup coconut water (or substitute with coconut milk for a creamier texture)

2 tablespoons honey (or agave syrup as a vegan alternative)

1 tablespoon fresh lime juice

A pinch of salt

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Watermelon Layer:

    - In a blender, combine the cubed watermelon, coconut water (or coconut milk), honey, lime juice, and a pinch of salt. Blend until the mixture becomes completely smooth and creamy.

      - Carefully pour the watermelon mixture into popsicle molds, filling each mold about halfway to allow space for the kiwi layer. Insert popsicle sticks and place the molds in the freezer. Freeze for approximately 2 hours, or until the watermelon layer is partially set.

        Prepare the Kiwi Layer:

          - While the watermelon layer is freezing, blend the sliced kiwis with a small splash of coconut water until smooth. If desired, add a little honey to enhance the sweetness.

            - Once the watermelon layer is partially frozen after 2 hours, remove the molds from the freezer. Gently pour the kiwi mixture over the frozen watermelon layer, filling each mold to the top. Reinsert the popsicle sticks and place the molds back in the freezer.

              Freeze Until Solid:

                - Allow the popsicles to freeze for an additional 4-6 hours, or until they are completely solid throughout.

                  Unmold and Serve:

                    - To easily release the pops, run warm water over the outside of the molds for a few seconds. Gently pull the pops out of the molds.

                      - Optionally garnish with fresh mint leaves for an extra touch of freshness. Serve immediately and enjoy!
