1 cup shredded mozzarella cheese

1 tablespoon olive oil

1 teaspoon balsamic vinegar

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and pepper, to taste

1 egg, beaten (for egg wash)

Fresh basil leaves for garnish

Make the Dough: In a large mixing bowl, whisk together the all-purpose flour, salt, and black pepper. Add the cold diced butter. Using a pastry cutter or your fingertips, blend the butter into the flour mixture until it resembles coarse sand or small pebbles.

    Add Water: Gradually add cold water, one tablespoon at a time, mixing gently after each addition until the dough starts to come together. Once combined, shape the dough into a disc, wrap it tightly in plastic wrap, and refrigerate for at least 30 minutes to chill.
