14 oz (400g) firm tofu, drained and pressed

2 tablespoons soy sauce

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon black pepper

½ teaspoon salt

1 red bell pepper, cut into 1-inch squares

1 zucchini, sliced into thick rounds

8-10 skewers (if using wooden skewers, soak them in water for at least 30 minutes)

For the Strawberry Salsa:

1 cup fresh strawberries, hulled and diced

1 small red onion, finely chopped

1 jalapeño, finely chopped (seeds removed for less heat)

2 tablespoons fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

Prepare the Tofu:

    - Start by cutting the pressed tofu into 1-inch cubes and place them in a medium-sized mixing bowl. In a separate small bowl, whisk together the soy sauce, olive oil, garlic powder, smoked paprika, black pepper, and salt until well combined. Pour this marinade over the tofu cubes. Gently toss the tofu to coat all sides. Cover the bowl and let the tofu marinate in the refrigerator for at least 30 minutes, allowing the flavors to infuse.

      Make the Strawberry Salsa:

        - While the tofu marinates, prepare the strawberry salsa. In a mixing bowl, combine the diced strawberries, finely chopped red onion, chopped jalapeño, and cilantro.
