14 oz (400g) firm tofu, pressed and cut into 1-inch cubes

3 tablespoons soy sauce

2 tablespoons creamy peanut butter

1 tablespoon freshly squeezed lime juice

1 tablespoon maple syrup or honey

2 cloves garlic, finely minced

1 teaspoon fresh ginger, grated

1 teaspoon curry powder

1 tablespoon sesame oil or vegetable oil for cooking

For the Rainbow Slaw:

2 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 cup carrots, julienned

1 cup bell peppers, assorted colors, thinly sliced

1 cup cucumber, thinly sliced

1/4 cup fresh cilantro, chopped

1 tablespoon rice vinegar

1 tablespoon lime juice

Salt and freshly ground black pepper to taste

For the Wraps:

8 large lettuce leaves (romaine or butter lettuce works best)

Chopped roasted peanuts for garnish

Extra fresh cilantro for garnish (optional)

Marinate the Tofu: In a mixing bowl, combine the soy sauce, peanut butter, lime juice, maple syrup, minced garlic, grated ginger, and curry powder. Mix well until smooth. Gently toss in the tofu cubes, ensuring they are evenly coated with the marinade. Allow the tofu to marinate for at least 30 minutes, or for enhanced flavor, refrigerate it overnight.

    Cook the Tofu: Heat the sesame oil in a large skillet over medium-high heat. Once the oil is hot, add the marinated tofu cubes. Cook for approximately 10-12 minutes, turning the tofu occasionally to achieve an even golden brown color and a slight crispiness on all sides. Once cooked, remove the skillet from the heat and set the tofu aside.

      Prepare the Rainbow Slaw: In a large mixing bowl, combine the shredded green cabbage, red cabbage, julienned carrots, sliced bell peppers, cucumber, and chopped cilantro. In a separate small bowl, whisk together the rice vinegar, lime juice, salt, and pepper. Pour this dressing over the slaw mixture and toss everything together until well coated.

        Assemble the Wraps: Take one lettuce leaf and place a generous tablespoon of the rainbow slaw in the center. Top the slaw with a few pieces of the cooked tofu.
