Ingredients

8 oz elbow macaroni

4 cups shredded sharp cheddar cheese, divided

2 cups whole milk

1 cup heavy cream

1/2 cup grated Parmesan cheese

1/4 cup unsalted butter

1/4 cup all-purpose flour

1 tsp Dijon mustard

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp smoked paprika

1/4 tsp cayenne pepper (optional for heat)

Salt and pepper to taste

Surprise Ingredient: 1 cup roasted butternut squash puree

1/2 cup panko breadcrumbs

2 tbsp olive oil

Fresh parsley for garnish (optional)

Instructions

Cook the Pasta: Begin by bringing a large pot of salted water to a vigorous boil. Add the elbow macaroni and cook until al dente, as per package instructions (usually 6-8 minutes). Once done, drain the pasta and set it aside.

Make the Cheese Sauce: In a large saucepan over medium heat, melt the unsalted butter. Once melted, whisk in the all-purpose flour. Continue to cook for about 1-2 minutes, stirring constantly, until it forms a roux (a smooth paste) without allowing it to brown.

Add Liquids: Gradually whisk in the whole milk and heavy cream. Keep whisking until the mixture is completely smooth and begins to thicken, which should take about 5-7 minutes.

Incorporate Cheeses and Flavorings: Stir in 3 cups of the shredded sharp cheddar cheese, along with the grated Parmesan cheese, Dijon mustard, garlic powder, onion powder, smoked paprika, and cayenne pepper if using. Mix until all the cheeses have melted and the sauce is luxuriously creamy.

Add the Surprise Ingredient: Gently fold in the roasted butternut squash puree. This surprise addition not only contributes a delightful creamy texture and vibrant color but also enhances the nutritional profile of your dish!

Combine Pasta and Sauce: Pour the cooked macaroni into the cheese sauce, stirring thoroughly to ensure each piece of pasta is well coated. Season with salt and pepper to taste.

Prepare for Baking: Preheat your oven to 350°F (175°C). Pour the macaroni and cheese mixture into a greased 9x13-inch baking dish, spreading it evenly.

Make the Crunchy Topping: In a small bowl, mix the panko breadcrumbs with the olive oil and the remaining 1 cup of shredded cheddar cheese. Stir until the breadcrumbs are fully coated, then sprinkle this mixture evenly over the macaroni and cheese.

Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the cheese is bubbling enticingly.

Garnish and Serve: Once you take it out of the oven, allow it to cool for about 5 minutes. If desired, garnish with chopped fresh parsley for a pop of color. Serve warm and relish the delightful creamy, cheesy goodness with an unexpected hint of sweetness from the butternut squash!
