2 cups rolled oats

2 cups almond milk (or preferred milk of choice)

1/4 cup maple syrup or honey (use maple syrup for a vegan option)

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1 1/2 cups fresh strawberries, hulled and diced (plus extra for topping)

1/4 cup chopped nuts (optional, such as almonds or walnuts)

1/4 cup shredded coconut (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Prepare a muffin tin by lightly greasing it with oil or lining it with paper muffin liners for easy removal.

    In a large mixing bowl, combine the rolled oats, almond milk, maple syrup (or honey), vanilla extract, ground cinnamon, and salt. Mix well until all ingredients are fully incorporated. Allow the mixture to rest for about 10 minutes so the oats can absorb some of the liquid.

      After resting, gently stir in the diced strawberries, reserving a few for garnishing, and fold in the optional chopped nuts and shredded coconut if you are using them.

        Evenly distribute the oat mixture into the muffin tin, filling each cup about three-quarters full. Place a few of the reserved strawberry pieces on top of each cup for a decorative finish.

          Bake in your preheated oven for 25-30 minutes, or until the oat cups are set in the middle and the tops are lightly golden brown.

            Once baked, remove the muffin tin from the oven and allow it to cool for approximately 10 minutes. Afterward, transfer the oat cups to a wire rack to cool completely.
