Ingredients

2 cups cooked chicken, shredded (rotisserie chicken works great)

1 cup fresh pineapple, diced (or canned, drained)

1 red bell pepper, thinly sliced

1 small red onion, thinly sliced

2 tablespoons olive oil

3 tablespoons soy sauce

2 tablespoons honey

1 tablespoon sriracha (adjust according to heat preference)

1 teaspoon ground ginger

1 teaspoon garlic powder

Salt and pepper to taste

4 large whole wheat or spinach wraps

1 cup mixed greens (such as spinach and arugula)

Optional toppings: chopped cilantro, lime wedges, sesame seeds

Instructions

Marinate the Chicken: In a mixing bowl, combine the shredded chicken with the soy sauce, honey, sriracha, ground ginger, garlic powder, and a pinch of salt and pepper. Stir well to ensure that the chicken is thoroughly coated in the marinade. Allow the mixture to marinate for at least 15 minutes to let the flavors meld.

Sauté the Vegetables: Heat the olive oil in a large skillet over medium heat. Add the sliced red bell pepper and red onion. Sauté them for approximately 3-5 minutes, or until they have softened yet retained a slight crunch. Once done, remove the skillet from the heat and set the vegetables aside.

Cook the Chicken: In the same skillet, add the marinated chicken along with any remaining marinade. Cook over medium heat for about 5-6 minutes, stirring occasionally, until the chicken is heated through and begins to caramelize slightly.

Assemble the Wraps: Place the whole wheat or spinach wraps flat on a clean surface. Start by adding a generous handful of mixed greens to each wrap. Follow with the sautéed vegetables and the sweet and spicy chicken mixture. Finish by sprinkling diced pineapple on top, along with any optional toppings like chopped cilantro, lime wedges, or sesame seeds.

Wrap it Up: To encase the fillings, fold in the sides of each wrap, then roll it up from the bottom to fully secure the contents. For easier eating, cut each wrap in half diagonally.

Serve: Enjoy the wraps immediately, squeezing a slice of lime over them for an added burst of flavor. Alternatively, you can chill the wraps in the refrigerator for a refreshing meal that’s perfect for on-the-go enjoyment.
