1 pound ground turkey

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

2 tablespoons olive oil

1 cup fresh baby spinach

1/4 cup chicken broth (or vegetable broth for a vegetarian option)

Prepare the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes, season them with salt and pepper, and sauté for about 10 minutes, stirring occasionally. The sweet potatoes should become tender and slightly caramelized. Once cooked, remove them from the skillet and set aside.

    Cook the Turkey: In the same skillet, add the remaining tablespoon of olive oil.
