Sweet Potato and Avocado Toast

2 medium sweet potatoes

1 ripe avocado

2 slices of whole-grain bread

1 tablespoon olive oil

1 teaspoon garlic powder

½ teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

Juice from ½ lime

Optional toppings: microgreens, red pepper flakes, sesame seeds, or crumbled feta cheese

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the sweet potatoes.

    Prepare the Sweet Potatoes: Rinse the sweet potatoes under cold water to clean. Halve each sweet potato lengthwise, then slice into wedges or rounds according to your preference. Arrange them evenly on a baking sheet.

      Season the Sweet Potatoes: Drizzle the olive oil over the sweet potatoes. Evenly sprinkle the garlic powder, smoked paprika, salt, and pepper on top. Toss the sweet potatoes gently to ensure they are evenly coated in the seasoning.
