Ingredients

2 ripe mangoes, peeled and diced

1 cup plain Greek yogurt (substitute with dairy-free yogurt for a vegan option)

1/4 cup honey or maple syrup (adjust according to your sweetness preference)

1/2 teaspoon vanilla extract

1/2 cup coconut milk (or any milk alternative of your choice)

A pinch of salt

Optional garnish: shredded coconut or fresh mint leaves

Instructions

Prepare the Mangoes: Begin by peeling the ripe mangoes. Dice them into small chunks, ensuring that you select mangoes that are vibrant yellow and emit a fragrant aroma for optimal sweetness and flavor.

Blend the Mixture: In a blender, combine the diced mangoes, Greek yogurt, your choice of honey or maple syrup, vanilla extract, coconut milk, and a pinch of salt. Blend all the ingredients on high speed until the mixture becomes smooth and creamy, making sure that every component is thoroughly mixed together.

Taste and Adjust: After blending, sample your mango yogurt mixture. If you find it needs a touch more sweetness, simply add a little more honey or maple syrup to your liking and blend again until combined.

Pour into Molds: Carefully pour the mango yogurt mixture into your popsicle molds, ensuring to leave a small amount of space at the top to allow for expansion as they freeze. If using popsicle sticks, gently insert them into the molds.

Freeze: Place the filled molds upright in the freezer. Allow the popsicles to freeze for at least 4 to 6 hours, or until they are completely solid.

Unmold the Popsicles: To release the popsicles from the molds, run warm water over the outside of each mold for a few seconds. This will loosen them, making it easier to gently pull the sticks and remove the popsicles.

Serve: For an added tropical flair, roll the popsicles in shredded coconut or garnish them with fresh mint leaves before serving. Enjoy your delightful and refreshing treat on a sunny day!
