Ingredients

1 cup Medjool dates, pitted

1 cup rolled oats

1 cup shredded unsweetened coconut

1/2 cup almond butter (or any nut butter of your choice)

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

1/4 teaspoon sea salt

1/4 cup chopped nuts (such as almonds or walnuts) for optional crunch

1/4 cup dark chocolate chips (optional, for a touch of sweetness)

Instructions

Prepare the Base: Start by placing the pitted Medjool dates into a food processor. Blend the dates until they transform into a thick paste, pausing occasionally to scrape down the sides of the bowl to ensure all pieces are thoroughly mixed.

Mix Ingredients: Once the date paste is smooth, add in the rolled oats, shredded coconut, almond butter, honey or maple syrup, vanilla extract, and sea salt. If you’re including chopped nuts or dark chocolate chips for added flavor and texture, mix them in at this point. Pulse everything together until well combined to form a sticky dough that sticks together when pressed.

Prepare the Pan: Take an 8x8 inch square baking dish and line it with parchment paper. Make sure to leave some overhang on the sides. This will aid in lifting the energy squares out of the dish later.

Press and Shape: Transfer the sticky mixture into the lined baking dish. With clean hands or a spatula, press the mixture down firmly and evenly into the pan to create a solid, compact layer that holds its shape.

Chill: Cover the pan with a lid or plastic wrap to prevent drying out. Place the dish in the refrigerator and let it chill for at least 1 to 2 hours; this will help the energy squares firm up and become easier to cut.

Cut into Squares: After the energy mixture has chilled and set, carefully lift it out of the pan using the parchment overhang and place it on a cutting board. Using a sharp knife, slice the mixture into 16 squares or rectangles, depending on your desired size.

Store: Store the energy squares in an airtight container in the refrigerator where they will stay fresh for up to a week. For longer storage, freeze them in a resealable bag and enjoy these delightful treats as a quick and nutritious snack whenever you need energy!

Prep Time: 15 minutes | Total Time: 2 hours 15 minutes | Servings: 16 squares

Presentation Tips: For a beautiful touch, serve the energy squares on a colorful platter and garnish with a sprinkle of shredded coconut or a drizzle of almond butter before serving. Enjoy!
