Ingredients

1 lb fresh salmon fillet

2 tablespoons sweet chili sauce

1 tablespoon soy sauce

1 tablespoon olive oil

1 teaspoon freshly grated ginger

2 garlic cloves, finely minced

1 tablespoon fresh lime juice

Salt and black pepper to taste

1 head of butter or romaine lettuce, leaves carefully separated

1 red bell pepper, thinly sliced

1 ripe avocado, sliced

1/4 cup fresh cilantro, roughly chopped

1/4 cup scallions, finely chopped

Lime wedges for serving

Instructions

Marinate the Salmon: In a medium bowl, combine the sweet chili sauce, soy sauce, olive oil, grated ginger, minced garlic, lime juice, and a pinch of salt and pepper. Whisk until thoroughly blended. Place the salmon fillet in a shallow dish and pour the marinade over it, ensuring it is well-coated. Cover the dish with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to infuse into the salmon.

Cook the Salmon: Preheat either a grill or a non-stick skillet over medium-high heat. Once heated, carefully remove the salmon from the marinade, setting the marinade aside for later. Cook the salmon for approximately 4-5 minutes on each side, or until it flakes easily with a fork, indicating it is fully cooked. Brush the salmon with the reserved marinade halfway through the cooking time to enhance its flavor. Once done, remove from heat and allow it to cool for a few minutes.

Prepare the Lettuce Wraps: While the salmon is cooling, take the lettuce leaves and rinse them under cold water. Gently pat them dry with a clean kitchen towel or paper towel, then arrange them neatly on a serving platter.

Assemble the Wraps: Flake the cooked salmon into smaller, bite-sized pieces using a fork. Place a generous portion of the flaked salmon in the center of each lettuce leaf. Top each salmon serving with slices of red bell pepper, avocado, a sprinkle of chopped cilantro, and finely chopped scallions.

Serve: Finish your wraps by squeezing a drizzle of fresh lime juice over each one for a burst of flavor. Serve immediately, accompanied by lime wedges on the side for guests to add extra zest as desired.
