12 oz (340 g) spaghetti or your choice of pasta

1 cup sun-dried tomatoes, packed in oil, drained and roughly chopped

4 cups fresh spinach, chopped coarsely

4 cloves garlic, minced

1 medium onion, finely chopped

1 cup heavy cream

1/2 cup freshly grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon dried oregano

Salt and black pepper, to taste

Fresh basil leaves, for garnish (optional)

Red pepper flakes (optional, for an added spicy kick)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Cook the spaghetti according to the package directions until al dente, typically around 8-10 minutes. Before draining, reserve 1 cup of the pasta water, then strain the rest and set the pasta aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté for approximately 3-4 minutes, or until the onions become soft and translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

      Incorporate Sun-Dried Tomatoes: Add the roughly chopped sun-dried tomatoes and dried oregano to the skillet. Sauté for another 2-3 minutes, ensuring the tomatoes are warmed through and infused with the garlic and onion flavors.

        Add the Spinach: Gradually add the coarsely chopped spinach to the skillet. Toss and sauté until the spinach wilts and reduces in size, which should take about 2-3 minutes.

          Create the Sauce: Lower the heat, then pour in the heavy cream while stirring continuously. Allow the mixture to simmer for 2-3 minutes, letting it thicken slightly.
