Summer Veggie Rice Paper Rolls

10 rice paper sheets

1 cup cooked vermicelli noodles

1 cup shredded carrots

1 cup cucumber, julienned

1 red bell pepper, thinly sliced

1 avocado, sliced

1 cup fresh mint leaves

1 cup fresh basil leaves

1 cup lettuce leaves (Bibb or romaine)

¼ cup chopped scallions

1 tablespoon sesame seeds (optional)

Dipping Sauce:

3 tablespoons hoisin sauce

1 tablespoon peanut butter

2 teaspoons soy sauce

1 teaspoon lime juice

Make the Dipping Sauce: In a small mixing bowl, combine hoisin sauce, peanut butter, soy sauce, and lime juice. Whisk the mixture until it is completely smooth and well blended. If the sauce is too thick, add a splash of water to reach your desired consistency. Set the sauce aside for later.

    Soak the Rice Paper Sheets: Take a shallow dish and fill it with warm water. Immerse one rice paper sheet into the water for 15-20 seconds, or until it becomes soft and pliable. Carefully remove the sheet from the water and lay it flat on a clean, dry surface or a damp kitchen towel.

      Assemble the Fillings: In the center of the soaked rice paper, begin layering your colorful fillings. Start with a small portion of cooked vermicelli noodles, followed by shredded carrots, julienned cucumber, thin slices of red bell pepper, avocado slices, and finish with fresh mint, basil, lettuce, and chopped scallions. Take care not to overfill, as this will make rolling difficult.

        Roll the Rice Paper: Gently fold the sides of the rice paper inward over the fillings. Then, starting from the bottom, roll the rice paper tightly upwards until the roll is fully sealed. Repeat this process with the remaining rice paper sheets and filling ingredients until all rolls are prepared.

          Serve: Arrange the finished rice paper rolls artfully on a serving platter. If desired, sprinkle sesame seeds over the top for a touch of elegance and crunch. Serve the rolls immediately alongside the dipping sauce for a refreshing, healthy snack or appetizer.
