2 ripe mangoes, peeled and diced

1 cup full-fat coconut milk (for a creamier texture)

2 tablespoons honey or maple syrup (adjust according to your sweetness preference)

1 teaspoon fresh lime juice

1/4 teaspoon sea salt

Fresh mint leaves for garnish (optional)

Instructions
 

Blend the Base: In a high-speed blender, combine the diced mangoes, coconut milk, honey or maple syrup, lime juice, and sea salt. Blend on high speed until the mixture is completely smooth and creamy, ensuring there are no mango chunks remaining.

    Taste Test: Once blended, taste the mixture and adjust the sweetness to your liking. If you prefer your popsicles sweeter, feel free to add an additional drizzle of honey or maple syrup and blend again.

      Prepare Molds: Carefully pour the mango-coconut mixture into popsicle molds. Be sure to leave about half an inch of space at the top of each mold to allow for expansion as the mixture freezes.

        Insert Sticks: If your molds include stick holders, insert the sticks into each mold at this point. If your molds do not have this feature, freeze the mixture for about 1 to 2 hours until it begins to firm up, then carefully insert wooden sticks into the partially frozen popsicles.

          Freeze: Place the filled molds in the freezer and let them freeze for a minimum of 6 hours, or until the popsicles are completely solid and firm.

            Unmold: To release your popsicles from the molds, run warm water over the outside of each mold for a few seconds. Gently pull the popsicles out; if they do not come out easily, run the water over the molds for a bit longer until they release.

              Serve: Before serving, garnish each popsicle with fresh mint leaves for a touch of color and added freshness. Enjoy your deliciously refreshing summer snack!
