2 cups cooked chicken breast, shredded or diced

1 cup fresh strawberries, hulled and sliced

1/4 cup red onion, thinly sliced

1/4 cup pecans or walnuts, chopped (optional for added crunch)

1/4 cup feta cheese or goat cheese, crumbled (optional for creaminess)

1/4 cup balsamic vinaigrette or your dressing of choice

Cook the Chicken: If you haven’t already prepared the chicken, season boneless, skinless chicken breasts with salt and pepper and cook them in a skillet over medium heat for about 6-7 minutes per side, or until fully cooked. Once cooled, shred or dice the chicken into bite-sized pieces. This can be done ahead of time for a quicker assembly of the salad.

    Prepare the Greens: Rinse the mixed greens under cold running water to clean off any dirt. After washing, use a salad spinner to dry them thoroughly, or gently pat them dry with paper towels to avoid excess moisture in the salad.

      Prepare Strawberries: Take the fresh strawberries, remove the green tops (hulling), and slice them into thin pieces. Set them aside to add a fresh, sweet flavor to your salad.
