14 oz firm tofu, pressed and cubed

2 tablespoons cornstarch

2 tablespoons vegetable oil (for frying)

1 red bell pepper, sliced into thin strips

1 yellow bell pepper, sliced into thin strips

1 cup snap peas, trimmed and rinsed

3 green onions, chopped (white and green parts separated)

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 cup honey

1/4 cup soy sauce (or tamari for a gluten-free option)

2 tablespoons rice vinegar

1 tablespoon sesame oil

Sesame seeds, for garnish

Fresh cilantro, for garnish (optional)

Prepare the Tofu: Begin by pressing the tofu for 15-20 minutes to eliminate excess moisture, which helps it achieve perfect crispiness. Once pressed, cut the tofu into 1-inch cubes and gently pat each cube dry with a paper towel to remove any remaining moisture.

    Coat the Tofu: In a mixing bowl, toss the tofu cubes with cornstarch until each piece is evenly coated. This coating is essential for achieving a delightful crunchy texture once fried.

      Fry the Tofu: Heat the vegetable oil in a large skillet or wok over medium-high heat until it shimmers. Carefully add the coated tofu cubes in a single layer, ensuring they are not crowded. Fry them for about 8-10 minutes, turning occasionally until all sides are golden brown and crispy. Once cooked, remove the tofu from the skillet and set aside on a plate lined with paper towels to absorb excess oil.
