4 chicken sausages (choose spicy for heat or mild for a gentle flavor)

1 red onion, cut into wedges

2 cups Brussels sprouts, halved

1 cup cherry tomatoes, halved

2 medium sweet potatoes, peeled and cubed

3 tablespoons balsamic vinegar

2 tablespoons olive oil

2 tablespoons honey or maple syrup

2 teaspoons dried thyme (or 1 tablespoon fresh thyme, finely chopped)

Salt and freshly ground black pepper to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 425°F (220°C) to prepare for baking.

    Prep the Vegetables: In a large mixing bowl, combine the halved Brussels sprouts, cherry tomatoes, wedges of red onion, and cubed sweet potatoes. Drizzle the olive oil over the vegetables, then season with salt, freshly ground black pepper, and dried thyme.
