Ingredients

For the Chicken Marinade:

2 large chicken breasts

2 tablespoons olive oil

2 tablespoons fresh lime juice

2 cloves garlic, finely minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon chili powder

1/2 teaspoon cayenne pepper (adjust to taste for spice)

Salt and pepper, to taste

For the Flatbread:

2 large flatbreads (store-bought or homemade)

1 cup shredded mozzarella cheese

1/2 cup diced red onion

1/2 cup diced bell peppers (a mix of red and green)

1/4 cup fresh cilantro, chopped

1/2 cup avocado, sliced (for garnish)

For the Spicy Ranch Drizzle:

1/2 cup ranch dressing

1 tablespoon sriracha sauce (adjust to taste for spice)

1 teaspoon fresh lime juice

Instructions

Marinate the Chicken: In a mixing bowl, combine the olive oil, lime juice, minced garlic, ground cumin, smoked paprika, chili powder, cayenne pepper, salt, and pepper. Whisk until well blended. Add the chicken breasts to the bowl, ensuring they are thoroughly coated with the marinade. Cover and refrigerate for at least 30 minutes, or ideally, allow to marinate overnight for enhanced flavor.

Prepare the Grill: Preheat your grill to medium-high heat. If you are using a grill pan, heat it on the stovetop until hot.

Grill the Chicken: Once the grill is hot, remove the chicken breasts from the marinade and place them onto the grill. Cook for approximately 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). After grilling, let the chicken rest for a few minutes, then slice into thin strips.

Make the Spicy Ranch Drizzle: While the chicken is cooking, prepare the spicy ranch drizzle by mixing the ranch dressing, sriracha sauce, and lime juice together in a small bowl. Adjust the sriracha according to your preferred spice level.

Assemble the Flatbreads: Take each flatbread and sprinkle half of the shredded mozzarella cheese evenly on top. Next, layer on the grilled chicken strips, diced red onion, and diced bell peppers. Finish with the remaining mozzarella cheese on top.

Grill the Flatbreads: Carefully place the assembled flatbreads on the grill or grill pan. Grill for about 3-4 minutes or until the cheese melts and the edges of the flatbreads become golden and crispy.

Finishing Touches and Serve: Once grilled, remove the flatbreads from the heat. Drizzle generously with the spicy ranch sauce and garnish with fresh cilantro and avocado slices. Cut into wedges and serve warm.

                Prep Time: 30 minutes | Total Time: 1 hour | Servings: 4

                  - Presentation Tips: Serve the flatbreads on a large wooden board, garnished with lime wedges and a sprinkle of extra cilantro for a vibrant, inviting look.
