Ingredients

1 lb ground chicken

1 tablespoon olive oil

3 cloves garlic, minced

1 teaspoon freshly grated ginger

1 small onion, finely chopped

1 bell pepper (any color), finely chopped

2 tablespoons soy sauce (or tamari for a gluten-free option)

1 tablespoon Sriracha (adjust amount based on spice preference)

1 tablespoon rice vinegar

1 tablespoon honey

1 teaspoon sesame oil

½ teaspoon freshly cracked black pepper

1 head of butter lettuce (or iceberg), leaves separated and thoroughly washed

¼ cup chopped green onions (for garnish)

¼ cup chopped fresh cilantro (for garnish)

Optional: ¼ cup chopped peanuts for an added crunch

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to prepare for the baking step.

Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Once the oil shimmers, add the minced garlic, freshly grated ginger, and finely chopped onion. Sauté for about 2-3 minutes, stirring frequently, until the onion turns translucent and fragrant.

Brown the Chicken: Add the ground chicken to the skillet. Use a spatula to break it apart as it cooks. Cook for about 5-7 minutes, or until the chicken is fully browned and no longer pink.

Incorporate the Bell Pepper: Toss in the finely chopped bell pepper and continue to sauté for an additional 3-4 minutes, or until the peppers are just softened and vibrant.

Add Flavor: In a small bowl, whisk together the soy sauce, Sriracha, rice vinegar, honey, sesame oil, and black pepper until well combined. Pour this sauce over the chicken mixture and stir thoroughly to evenly coat. Allow it to simmer on low heat for 2-3 minutes, enabling the flavors to meld beautifully.

Bake the Mixture: Transfer the seasoned chicken mixture to a greased baking dish, spreading it out evenly for even heating. Bake in your preheated oven for about 10-15 minutes, or until heated through.

Prepare the Lettuce Wraps: While the chicken bakes, carefully prepare the butter lettuce leaves, ensuring they remain intact and ready to hold the delicious filling.

Assemble the Wraps: Once the chicken mixture is out of the oven, take a generous spoonful and place it into each lettuce leaf, creating delightful wraps.

Garnish: Finish the wraps by sprinkling chopped green onions, fresh cilantro, and, if desired, some crunchy chopped peanuts on top for an added texture.

Serve: Present the wraps warm, accompanied by extra Sriracha or soy sauce on the side for those who wish to kick up the flavor even further.
