Ingredients

1 cup (2 sticks) unsalted butter, softened to room temperature

1 ½ cups granulated sugar

1 cup packed brown sugar

2 large eggs

2 teaspoons pure vanilla extract

3 cups all-purpose flour

2 teaspoons cream of tartar

1 teaspoon baking soda

½ teaspoon salt

1 tablespoon ground cinnamon

1 tablespoon granulated sugar (for topping)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Prepare a 9x13-inch baking pan by greasing it with butter or lining it with parchment paper for easy removal later.

Cream Butter and Sugars: In a large mixing bowl, use an electric mixer to beat the softened butter until it becomes creamy and smooth. Gradually add the granulated sugar and brown sugar, continuing to mix until the mixture is light, fluffy, and well combined.

Incorporate Eggs and Vanilla: Add the eggs to the mixture, one at a time, ensuring to mix thoroughly after each addition. Stir in the vanilla extract until everything is well incorporated and smooth.

Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, cream of tartar, baking soda, salt, and ground cinnamon until they are evenly mixed and there are no lumps.

Mix Wet and Dry Ingredients: Slowly add the dry ingredients to the butter and sugar mixture, mixing on low speed until just combined. Take care not to overmix, as this can make the bars dense rather than soft.

Spread the Batter: Pour the thick dough into the prepared baking pan, using a spatula to spread it evenly across the pan.

Prepare the Cinnamon Sugar Topping: In a small bowl, combine 1 tablespoon of granulated sugar with 1 tablespoon of ground cinnamon. Sprinkle this mixture evenly over the top of the dough for a sweet finish.

Bake: Place the pan in the preheated oven and bake for 25-30 minutes. The edges should turn a beautiful golden brown, and a toothpick inserted in the center should come out with a few moist crumbs clinging to it.

Cool and Slice: Once baked, remove the pan from the oven and let the bars cool in the pan on a wire rack for about 15 minutes. If you lined the pan with parchment paper, carefully lift the bars out and place them on the rack to cool completely. Once slightly cooled, cut into squares or bars.

Serve and Enjoy: These heavenly soft bars can be enjoyed warm or at room temperature. Watch as family and friends eagerly devour these delightful treats!
