Ingredients

1 can (15 oz) chickpeas, drained and rinsed

1 red bell pepper, roasted and peeled (store-bought or homemade)

1 tablespoon olive oil

1 teaspoon smoked paprika

1/2 teaspoon ground cumin

1/4 teaspoon cayenne pepper (adjust to taste for spice level)

1/4 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons tahini

1 tablespoon fresh lemon juice

1 clove garlic, minced

4 large whole wheat or spinach wraps

1 cup fresh spinach leaves

Optional: Sliced avocado, sliced cucumbers, and fresh herbs (such as cilantro or parsley) for garnish

Instructions

Prepare the Chickpeas: In a medium mixing bowl, combine the drained and rinsed chickpeas with olive oil, smoked paprika, ground cumin, cayenne pepper, salt, and black pepper. Using a fork or a potato masher, gently mash the chickpeas until they are mostly broken down yet still retain some texture—it's perfectly fine to leave a few whole chickpeas.

Make the Tahini Sauce: In a small bowl, whisk together tahini, freshly squeezed lemon juice, minced garlic, and a pinch of salt. If the mixture is too thick for your liking, gradually add a teaspoon of water until you achieve your desired creamy consistency.

Assemble the Wraps: Lay one whole wheat or spinach wrap flat on a clean surface. Spoon a generous layer of the smoky chickpea mixture down the center of the wrap, spreading it evenly.

Add the Peppers and Spinach: Arrange strips of roasted red pepper over the chickpeas, followed by a handful of fresh spinach leaves. If desired, enhance the wraps further with slices of creamy avocado and crisp cucumbers for added texture.

Drizzle with Tahini Sauce: Drizzle a good amount of your tahini sauce over the vegetables to add richness and flavor.

Wrap It Up: To create a secure wrap, fold the sides inward, then roll from the bottom up, enclosing the filling snugly. For convenience, wrap the filled wrap in foil or parchment paper.

Serve & Enjoy: Slice the wraps in half for easy eating and serve immediately. Enjoy your delicious smoky chickpea and roasted red pepper wraps with extra tahini sauce on the side for dipping, if desired.

                Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 4

                  - Presentation Tips: Arrange the halves of the wraps on a platter, garnished with fresh herbs and colorful cucumber slices for an inviting look. A small bowl of tahini sauce can be placed in the center for dipping, enhancing the visual appeal.
