1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cayenne pepper (adjust according to heat preference)

Salt and pepper, to taste

½ cup barbecue sauce (store-bought or homemade)

4 large whole wheat tortillas or wraps

2 cups green cabbage, finely shredded

1 cup carrots, grated

¼ cup red onion, thinly sliced

¼ cup fresh cilantro or parsley, chopped

2 tablespoons apple cider vinegar

1 tablespoon honey or maple syrup (optional for added sweetness)

½ teaspoon black pepper

Prepare the Chickpeas: In a medium mixing bowl, add the drained and rinsed chickpeas. Pour in the olive oil and sprinkle the smoked paprika, garlic powder, onion powder, cayenne pepper, along with a pinch of salt and pepper. Toss the chickpeas gently until they are evenly coated with the spices.

    Cook the Chickpeas: Place a large skillet over medium heat. Add the seasoned chickpeas to the skillet and cook for approximately 5-7 minutes. Stir occasionally until they are heated through and have a slightly crispy texture.

      Mix the Coleslaw: In a large mixing bowl, combine the finely shredded cabbage, grated carrots, sliced red onion, and chopped cilantro (or parsley). Drizzle in the apple cider vinegar and, if desired, add honey (or maple syrup) for a touch of sweetness. Sprinkle in the black pepper and toss everything together until well combined. Taste the mixture and adjust seasonings as needed.
