2 pounds beef chuck roast, cut into 1-inch cubes

4 large onions, thinly sliced

4 cloves garlic, minced

2 cups beef broth

1 cup red wine (optional; substitute with more beef broth if preferred)

2 tablespoons Worcestershire sauce

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon balsamic vinegar

Salt and pepper to taste

8 ounces egg noodles

1 cup Swiss or Gruyère cheese, shredded

Fresh parsley, chopped (for garnish)

Prepare the Beef: Begin by seasoning the cubed beef chuck roast generously with salt and pepper. In a large skillet, heat a drizzle of cooking oil over medium-high heat. Sear the beef chunks for about 3-4 minutes on each side until they are beautifully browned. Once seared, transfer the beef to the slow cooker.

    Sauté the Onions: In the same skillet used for the beef, add the thinly sliced onions. Cook them over medium heat, stirring frequently, until they become caramelized and golden brown, approximately 15-20 minutes. Add the minced garlic during the last 2-3 minutes of cooking to avoid burning. Once done, transfer the caramelized onions to the slow cooker with the beef.

      Build the Sauce: Carefully pour in the beef broth and, if using, the red wine into the slow cooker. Stir in the Worcestershire sauce, fresh thyme, and balsamic vinegar, ensuring all ingredients are well combined.

        Slow Cook: Cover the slow cooker and set it to cook on low for 8 hours, or on high for 4 hours. The beef should become tender and shreddable.

          Cook the Noodles: About 30 minutes before you plan to serve, cook the egg noodles according to the package instructions. Drain them and set aside, ready to mix into the dish.
