2 medium zucchinis, grated

1 cup shredded cheese (choose between cheddar or mozzarella)

1 small onion, finely chopped

1 bell pepper, diced (your choice of color)

1 teaspoon garlic powder

1 teaspoon ground cumin

Salt and pepper, to taste

4 whole wheat tortillas

Olive oil, for frying

Fresh cilantro, for garnish (optional)

Salsa or sour cream, for serving (optional)

Instructions
 

Prepare the Zucchini Mixture:

    In a large mixing bowl, combine the grated zucchinis, chopped onion, diced bell pepper, garlic powder, cumin, salt, and pepper. Stir thoroughly until all ingredients are evenly mixed and coated.

      Dry the Zucchini:

        Transfer the zucchini mixture to a clean kitchen towel or cheesecloth. Gather the edges of the towel and twist to squeeze out excess moisture from the mixture. This step is critical to ensure your quesadillas don't turn out soggy.

          Assemble the Quesadillas:

            Place one tortilla on a clean, flat surface. On one half of the tortilla, sprinkle a layer of cheese, followed by a generous amount of the zucchini mixture. Add another sprinkle of cheese on top to help bind everything. Carefully fold the tortilla over to encase the filling.

              Cook the Quesadillas:

                Heat a skillet over medium heat and add a drizzle of olive oil. Once the oil is shimmering, gently place the folded quesadilla into the skillet.
