Ingredients

1 cup fig jam

4 medium flour tortillas (10-inch)

1 cup shredded sharp cheddar cheese

1 cup crumbled goat cheese

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

2 tablespoons unsalted butter

Honey (for drizzling, optional)

Fresh figs, sliced (for garnish, optional)

Instructions

Prep the Ingredients: Start by gathering all your ingredients. For easy spreading, ensure that the fig jam is at room temperature.

Heat the Pan: In a large skillet set over medium heat, melt 1 tablespoon of unsalted butter. Allow it to foam lightly without letting it brown.

Assemble the Quesadillas: Take each tortilla and lay it flat. On one half of each tortilla, spread approximately ¼ cup of fig jam evenly. Layer with ¼ cup of shredded sharp cheddar cheese and ¼ cup of crumbled goat cheese. Finish with a sprinkle of fresh thyme leaves.

Fold: Gently fold each tortilla in half over the filling, pressing down lightly to seal the edges.

Cook the Quesadillas: Place the folded quesadillas in the preheated skillet. Cook them for about 3–4 minutes on each side, or until the tortillas are golden brown and crispy, and the cheeses have melted. If needed, add the remaining tablespoon of butter to the skillet for additional flavor.

Serve: Once cooked, remove the quesadillas from the skillet and allow them to cool for a minute. Cut each quesadilla into wedges for easy serving. For an extra touch of sweetness, drizzle honey over the top and garnish with fresh fig slices if desired.

Enjoy: Serve the quesadillas warm and indulge in the delightful marriage of sweet figs and creamy cheeses!
