2 cups fresh blueberries

1/4 cup granulated sugar (adjust based on your sweetness preference)

1 tablespoon freshly squeezed lemon juice

1 teaspoon lemon zest (from an organic lemon, if possible)

1 cup heavy cream

1 cup Greek yogurt (preferably full-fat for creaminess)

1 teaspoon pure vanilla extract

A pinch of fine sea salt

Additional fresh blueberries and mint leaves for garnish (optional but recommended)

Begin by preparing the blueberry compote: In a medium saucepan, combine the fresh blueberries, 2 tablespoons of granulated sugar, lemon juice, and lemon zest. Place the saucepan over medium heat and cook for approximately 5-7 minutes, gently stirring as the blueberries begin to burst and the mixture thickens slightly. Once done, remove from heat and allow to cool completely.

    While the blueberry mixture cools, whip the heavy cream: In a large mixing bowl, use an electric mixer to whip the heavy cream along with the remaining 2 tablespoons of sugar until soft peaks form. Be cautious not to overwhip; you want the cream to remain silky and smooth.

      In a separate bowl, combine the Greek yogurt with the vanilla extract and a pinch of sea salt. Mix well until the ingredients are thoroughly combined.

        Once both mixtures are ready, gently fold the whipped cream into the Greek yogurt mixture. Take care not to deflate the cream; the goal is to maintain a light, airy texture throughout the mixture.

          When the blueberry compote has cooled completely, carefully introduce it to the creamy mixture by folding it in, leaving some streaks visible for a beautiful marbled effect.
