2 cups heavy cream

1 cup whole milk

2 tablespoons dried Earl Grey tea leaves (or 2 tea bags)

1/2 cup granulated sugar

2 teaspoons gelatin powder

3 tablespoons cold water

1 teaspoon vanilla extract

A pinch of salt

In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. Stir gently to mix the ingredients, and place the pan over medium heat. Heat the mixture until it is just about to simmer—do not let it boil, stirring occasionally to prevent scorching.

    Once the mixture is warm and aromatic, remove the saucepan from the heat. Add the dried Earl Grey tea leaves (or the tea bags) to the warm liquid, covering the saucepan with a lid. Allow the tea to steep for 10-15 minutes, adjusting the steeping time depending on your preference for a stronger or milder tea flavor.

      While the tea is steeping, prepare the gelatin. In a small bowl, sprinkle the gelatin powder over the cold water and let it sit for about 5 minutes. This step will allow the gelatin to bloom, becoming spongy and ready to dissolve.

        After steeping, strain the tea-infused cream mixture through a fine mesh sieve into a separate clean bowl to remove the tea leaves or tea bags. Pour the strained mixture back into the saucepan and keep it on low heat.

          Add the bloomed gelatin, vanilla extract, and a pinch of salt to the warm cream mixture. Stir continuously for about 2-3 minutes until the gelatin has completely dissolved and the mixture is smooth.

            Carefully pour the panna cotta mixture into individual serving glasses or ramekins. Allow them to cool at room temperature for approximately 30 minutes. Afterward, transfer the panna cotta to the refrigerator and chill for at least 4 hours, or until fully set.

              When ready to serve, you may gently run a butter knife around the edges of the panna cotta to loosen it. If desired, invert the panna cotta onto a plate or serve directly in the glasses for a rustic presentation. Top with edible flowers or a sprinkle of vibrant citrus zest to enhance the visual appeal and flavor.
