1 pre-made pie crust or pastry dough (store-bought or homemade)

2 tablespoons olive oil

1 pound Italian sausage (choose sweet or spicy based on preference)

3 cups kale, chopped with stems removed

1 medium onion, thinly sliced

2 cloves garlic, minced

1 teaspoon red pepper flakes (optional, for heat)

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1 teaspoon dried oregano

Salt and freshly ground black pepper, to taste

1 egg (for egg wash)

Fresh parsley, chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). While it heats, line a baking sheet with parchment paper to prevent sticking.

    Cook the Sausage: Heat the olive oil in a large skillet over medium heat. Once the oil is shimmering, add the Italian sausage, breaking it apart with a wooden spoon as it cooks. Continue to cook until the sausage is browned and fully cooked through, which should take approximately 5-7 minutes. Use a slotted spoon to transfer the cooked sausage to a plate, leaving the drippings in the skillet.

      Sauté the Vegetables: In the same skillet with the sausage drippings, add the sliced onion. Sauté for about 3-4 minutes or until the onion is soft and translucent. Next, add the minced garlic and the optional red pepper flakes, cooking for an additional minute until fragrant.

        Add the Kale: Gradually stir in the chopped kale, mixing it with the onions and garlic. Cook until the kale has wilted and is tender, which should take about 3-5 minutes. Season the mixture with salt, black pepper, and dried oregano to taste.

          Combine Ingredients: Return the previously cooked sausage to the skillet, mixing it well with the sautéed vegetables. Remove the skillet from heat and allow the mixture to cool slightly. Once cooled, gently fold in the ricotta cheese and half of the grated Parmesan until everything is well incorporated.

            Prepare the Galette: On a lightly floured surface, roll out your pie crust or pastry dough into a large circle, aiming for about 12 inches in diameter. Transfer this dough circle to your prepared baking sheet.

              Assemble the Galette: Spoon your sausage and kale mixture into the center of the dough. Leave a 2-inch border around the edges for folding. Evenly sprinkle the remaining Parmesan cheese over the filling. Carefully fold the edges of the dough up and over the filling, creating pleats for a rustic appearance.

                Egg Wash: In a small bowl, beat the egg to create an egg wash. Using a pastry brush, brush the egg wash over the exposed crust to achieve a beautiful golden finish after baking.

                  Bake: Place the galette into your preheated oven and bake for 25-30 minutes, or until the crust is golden brown and crispy to the touch.

                    Serve: Once baked, remove the galette from the oven and allow it to cool for a few minutes. Before serving, sprinkle with freshly chopped parsley for a pop of color and freshness.
