Ingredients

1 cup canned white beans (cannellini or navy beans), drained and rinsed

1 tablespoon olive oil

2 cups fresh mushrooms, sliced (cremini or button mushrooms)

4 cloves garlic, finely minced

1 teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon freshly squeezed lemon juice

4 corn tostadas (store-bought or homemade)

1 ripe avocado, thinly sliced

Fresh cilantro sprigs, for garnish

Optional: Crumbled feta or cotija cheese, for topping

Lime wedges, for serving

Instructions

Sauté the Mushrooms: In a large skillet, heat the olive oil over medium heat. Once hot, add the sliced mushrooms. Sauté for approximately 5-7 minutes, stirring occasionally, until the mushrooms have released their moisture and developed a golden-brown color.

Add Garlic and Seasonings: Once the mushrooms are browned, add the minced garlic and smoked paprika. Continue to cook for an additional 1-2 minutes, stirring frequently, until the garlic is fragrant but not burnt. Season the mixture with salt and freshly ground black pepper to taste.

Incorporate the Beans: Gently fold the drained white beans into the skillet, along with the fresh thyme and lemon juice. Stir carefully to combine, cooking for another 2-3 minutes until the beans are warmed through and infused with the flavors. Taste and adjust seasoning if necessary.

Prepare the Tostadas: While the mushroom and bean mixture is cooking, toast the corn tostadas if desired. In a dry skillet or oven, lightly toast each tostada for about one minute on each side until they are crispy and golden.

Assemble the Tostadas: Place each tostada on a serving plate. Generously spoon the sautéed garlic mushroom and white bean mixture onto each tostada, allowing it to pile high. Layer sliced avocado on top for a creamy complement.

Finishing Touches: Garnish each tostada with fresh cilantro leaves and, if desired, sprinkle with crumbled feta or cotija cheese for added richness. Serve with lime wedges on the side, allowing guests to squeeze fresh lime juice over their tostadas for an extra burst of flavor.

Serve & Enjoy: These hearty, plant-powered tostadas make for a delightful snack, appetizer, or light meal. Enjoy every bite as you savor the combination of flavors and textures!
