Ingredients

8 chicken drumsticks

1/2 cup unsalted butter, melted

6 cloves garlic, minced

2 tablespoons fresh parsley, finely chopped

1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried)

1 teaspoon paprika

1 teaspoon onion powder

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

Juice of 1 lemon

Lemon wedges (for serving)

Instructions

Preheat the Oven: Start by preheating your oven to 425°F (220°C). Prepare a baking sheet by lining it with parchment paper or lightly greasing it to prevent sticking.

Prepare the Garlic Butter Mixture: In a medium mixing bowl, combine the melted butter with the minced garlic, chopped parsley, chopped rosemary, paprika, onion powder, dried thyme, salt, black pepper, and the juice of one lemon. Whisk everything together until you achieve a smooth and well-blended sauce.

Coat the Drumsticks: Take the chicken drumsticks and place them in a large mixing bowl. Pour approximately two-thirds of the prepared garlic butter mixture over the drumsticks. Using your hands or tongs, toss the drumsticks thoroughly so each one is evenly coated in the flavorful garlic butter.

Arrange on Baking Sheet: Lay the coated drumsticks out on the prepared baking sheet in a single layer, ensuring they are spaced apart for optimal cooking. This helps them crisp up nicely.

Roast the Drumsticks: Place the baking sheet in the preheated oven and roast the drumsticks for 35-40 minutes. Make sure to turn them halfway through cooking for even browning. They should turn golden brown and reach an internal temperature of 165°F (75°C) when fully cooked.

Baste with Remaining Butter: In the last 10 minutes of roasting, take the remaining garlic butter mixture and lightly brush it over the drumsticks. This extra basting will enhance both the flavor and the moisture of the finished dish.

Serve: After roasting, remove the drumsticks from the oven and allow them to rest for about 5 minutes. Serve them hot with fresh lemon wedges on the side, and feel free to sprinkle additional chopped parsley over the top for a burst of color.

Presentation Tips: For an appealing presentation, arrange the drumsticks on a serving platter, drizzling any remaining garlic butter over them, and accompany with the lemon wedges for a pop of color.
