1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 cups mixed vegetables (such as bell peppers, zucchini, and broccoli)

1 packet ranch dressing mix (approximately 1 oz)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

4 sheets of heavy-duty aluminum foil (each about 12 inches long)

Preheat Oven or Grill: Begin by preheating your oven to 400°F (200°C). If you are using a grill, prepare it for medium heat.

    Prepare the Marinade: In a large mixing bowl, add the bite-sized chicken pieces along with the mixed vegetables. Sprinkle in the ranch dressing mix, garlic powder, onion powder, olive oil, salt, and pepper. Use a spoon or spatula to combine everything thoroughly, ensuring that the chicken and vegetables are evenly coated with the seasoning.

      Create Foil Packs: Lay out the four sheets of aluminum foil on a flat surface. Divide the chicken and vegetable mixture evenly among the sheets, placing it in the center of each piece of foil.

        Seal the Packs: Carefully fold up the sides of each foil sheet over the chicken and vegetables. Then, fold down the top edges to create a tight seal, ensuring that steam is trapped inside for optimal cooking.

          Cook: Place the sealed foil packs on a baking sheet if baking, or set them directly on the grill grates. Cook in the preheated oven for approximately 25-30 minutes or on the grill for the same duration.

            Check for Doneness: After 25 minutes, carefully open one of the foil packs (be cautious of the escaping steam). Check the chicken’s internal temperature; it should reach 165°F (74°C) for safe consumption. If it hasn't reached this temperature, reseal the pack and return it to the oven or grill for an additional 5-10 minutes.

              Serve: When fully cooked, remove the foil packs from the heat source. Open them carefully to avoid steam burns. Garnish each pack with freshly chopped parsley before serving.
