1 cup sushi rice

1 1/4 cups water

2 tablespoons rice vinegar

1 tablespoon sugar

1 teaspoon salt

4 sheets nori (seaweed)

1/2 avocado, sliced

1 small cucumber, julienned

1 medium carrot, julienned

1 small red bell pepper, thinly sliced

1/2 cup purple cabbage, shredded

2 radishes, thinly sliced (optional)

Sesame seeds for garnish

Soy sauce for serving

Pickled ginger (optional)

Wasabi (optional)

Instructions
 

Cook the Sushi Rice: Begin by rinsing the sushi rice under cold water in a fine-mesh strainer until the water runs clear, which will help remove excess starch. In a medium saucepan, combine the rinsed rice with 1 1/4 cups of water. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and let it simmer for about 18-20 minutes or until the rice is tender and all the water is absorbed. When finished, remove from heat and allow the rice to sit, still covered, for an additional 10 minutes to steam and become fluffy.

    Prepare Sushi Vinegar: In a small mixing bowl, combine the rice vinegar, sugar, and salt. Microwave the mixture for about 30 seconds or until the sugar has dissolved completely. Carefully stir this warm vinegar mixture into the cooked rice, gently folding it in to avoid smashing the grains. Allow the rice to cool to room temperature while you prep the vegetables.

      Prepare the Vegetables: While the rice is cooling, wash and prepare your fresh vegetables. Slice the avocado and julienne the cucumber and carrot. Thinly slice the red bell pepper, shred the purple cabbage, and if using, slice the radishes. Arrange all the prepared veggies on a platter for easy access.

        Assemble the Sushi Rolls: Place a bamboo sushi mat on a clean, flat surface. Take a sheet of nori and lay it shiny side down on the mat. With wet hands (to prevent sticking), grab about 1/2 cup of sushi rice and evenly spread it over the nori, leaving a 1-inch border at the top edge to allow for sealing later.

          Layer the Filling: Position a line of the sliced avocado, julienned cucumber, carrot, thinly sliced red bell pepper, shredded purple cabbage, and optional radishes horizontally across the center of the rice-covered nori.

            Roll the Sushi: Starting from the bottom edge of the mat, carefully lift the edge of the mat and begin to roll it over the filling. Apply gentle pressure, rolling tightly to create a compact sushi roll. Continue to roll until you reach the exposed edge of the nori, then wet this edge with a little water to seal the roll securely.

              Slice the Rolls: Using a sharp knife (dipped in water to prevent sticking), slice the sushi roll into bite-sized pieces. Aim for even pieces for the best presentation.

                Serve: Arrange the sliced sushi rolls neatly on a serving plate. For a final touch, sprinkle sesame seeds generously over the top. Serve alongside small dishes of soy sauce, pickled ginger, and wasabi for dipping.
