2 large ripe peaches, pitted and sliced into wedges

4 mini flatbreads or naan

1 cup creamy ricotta cheese

1 cup fresh arugula, rinsed and dried

2 tablespoons honey

1 tablespoon extra virgin olive oil

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and freshly ground black pepper, to taste

Balsamic glaze (optional, for drizzling)
