1 cup unsweetened canned pumpkin puree

1/2 cup walnuts, chopped

1/4 cup honey or maple syrup

1/2 cup warm water (around 110°F or 45°C)

2 teaspoons instant yeast

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

1/4 teaspoon ground cloves

1 tablespoon olive oil (plus extra for greasing)

Optional: 1/4 cup sunflower seeds or pumpkin seeds for topping

Activate the Yeast: In a small bowl, combine the warm water and instant yeast. Stir gently and allow the mixture to sit for about 5 minutes until it develops a frothy top.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the whole spelt flour, cinnamon, nutmeg, salt, and ground cloves until thoroughly combined and free of lumps.

      Combine Wet Ingredients: In a separate mixing bowl, whisk together the pumpkin puree, honey (or maple syrup), and olive oil until the mixture is smooth and free from any pumpkin lumps.
