1 cup canned pumpkin puree (ensure it's not pumpkin pie filling)

1/4 cup maple syrup or honey

1/4 cup vegetable oil or melted coconut oil

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

1 1/2 cups rolled oats (blended into flour)

1/2 cup walnuts or pecans, chopped (optional)

1/2 cup chocolate chips (optional)

Prepare the Oats: If not done previously, place the rolled oats in a blender or food processor and blend them until they achieve a fine flour-like consistency. Once ground, set the oat flour aside.

    Blend the Wet Ingredients: In your blender, combine the ripe banana, pumpkin puree, maple syrup or honey, vegetable oil, eggs, and vanilla extract. Blend these ingredients until they are completely smooth and fully incorporated.

      Mix Dry Ingredients: In a large mixing bowl, combine the blended oat flour, baking soda, baking powder, ground cinnamon, ground nutmeg, and salt. Whisk these dry ingredients together thoroughly to ensure they are evenly distributed.
