3 ripe peaches, pitted and chopped

1 cup plain Greek yogurt (or substitute with non-dairy yogurt for a vegan option)

1/4 cup honey or maple syrup (adjust based on your sweetness preference)

1 tsp vanilla extract

1 tbsp freshly squeezed lemon juice

Pinch of salt

Optional: fresh peach slices or mint leaves for garnish

Prepare the Peaches: Begin by washing the peaches thoroughly. Carefully pit and chop them into small pieces. If you desire a smoother popsicle, you can peel the peaches, though leaving the skin on provides extra fiber and nutritional benefits.

    Blend the Ingredients: In a high-speed blender or food processor, combine the chopped peaches, Greek yogurt, honey (or maple syrup), vanilla extract, lemon juice, and a pinch of salt. Blend everything together until the mixture is smooth and creamy. Taste the blend and adjust sweetness as needed.

      Layer the Popsicles: For a visually appealing swirled effect, pour half of the yogurt mixture into popsicle molds. If you’re using them, add some reserved chopped peach pieces for added texture. Top with the remaining yogurt mixture. To create a beautiful marble effect, take a skewer or toothpick and gently swirl the mixtures together without fully blending them.

        Insert Sticks and Freeze: Carefully place the popsicle sticks into the center of each mold. If your molds are not designed to hold the sticks upright, freeze the molds for about 2 hours until the mixture has slightly firmed, then insert the sticks for the remaining freeze time.
