Ingredients

For the Peach Salsa:

2 ripe peaches, diced into small pieces

1 small red onion, finely chopped

1 jalapeño, deseeded and minced for mild heat

1 small red bell pepper, diced

1/4 cup fresh cilantro, roughly chopped

Juice of 1 lime (about 2 tablespoons)

Salt, to taste

For the Black Bean Tacos:

2 (15 oz) cans of black beans, rinsed and drained thoroughly

1 teaspoon ground cumin

1 teaspoon chili powder

1 tablespoon extra virgin olive oil

Salt and pepper, to taste

8 small corn or flour tortillas

1 avocado, sliced into thin wedges

1 cup crumbled feta or queso fresco (optional for a salty kick)

Lime wedges, for serving

Instructions

Prepare the Peach Salsa:

    - In a mixing bowl, combine the diced peaches, finely chopped red onion, minced jalapeño, and diced red bell pepper.

      - Add the chopped cilantro and squeeze the fresh lime juice over the mixture. Season with salt to taste.

        - Stir all the ingredients together gently until well combined. Let the salsa rest for at least 15 minutes at room temperature to allow the flavors to meld beautifully.

          Cook the Black Beans:

            - Heat the olive oil in a skillet over medium heat.

              - Add the rinsed black beans, followed by the cumin, chili powder, and a sprinkle of salt and pepper.

                - Stir the mixture well and cook for about 5-7 minutes, until the beans are heated through and fragrant. For a creamier consistency, mash a portion of the beans gently with the back of a spoon.

                  Warm the Tortillas:

                    - In a separate skillet, warm the tortillas over medium heat for about 30 seconds on each side until they are pliable and heated through. Alternatively, wrap them in aluminum foil and place them in a preheated oven at a low temperature to stay warm.

                      Assemble the Tacos:

                        - Take a warm tortilla and place a generous scoop of the seasoned black beans in the center.

                          - Top the beans with a spoonful of the sweet and spicy peach salsa, followed by a few slices of creamy avocado.

                            - If desired, sprinkle crumbled feta or queso fresco on top for added flavor.

                              Serve:

                                - Serve the tacos immediately while they're warm, accompanied by lime wedges on the side for an extra zesty kick that can be squeezed over the fillings.
