Ingredients

1 cup all-purpose flour

1/2 teaspoon salt

1/2 teaspoon baking powder

1/4 cup plain Greek yogurt

2 tablespoons olive oil

1/4 cup warm water (add more as needed)

2 medium ripe peaches, thinly sliced

2 tablespoons honey (plus additional for drizzling)

1 tablespoon fresh thyme leaves (or mint if preferred)

1/2 cup ricotta cheese

1/4 cup crumbled feta cheese

Freshly cracked black pepper, to taste

Optional: A sprinkle of crushed red pepper flakes for a hint of spice

Instructions

Prepare the Flatbread Dough: In a mixing bowl, whisk together the all-purpose flour, salt, and baking powder until well combined. Add the plain Greek yogurt and olive oil to the mixture, stirring to incorporate all ingredients. Gradually pour in the warm water while mixing until a dough starts to form. If the dough feels too sticky, sprinkle in a little more flour; if it seems too dry, add extra warm water, one tablespoon at a time.

Knead and Rest: Transfer the dough onto a lightly floured surface and knead it for about 5 minutes, or until it becomes smooth and elastic. Shape the dough into a ball, cover it with a clean towel or plastic wrap, and let it rest for 30 minutes to allow the gluten to relax.

Preheat the Oven: While the dough is resting, preheat your oven to 450°F (230°C). If you have a pizza stone, place it in the oven to heat up as well.

Roll Out the Dough: After the resting period, divide the dough into 2 to 4 equal portions based on your preferred flatbread size. On a floured surface, use a rolling pin to roll each portion into an oval shape, approximately 1/4 inch thick.

Prepare the Toppings: In a small bowl, combine the ricotta and crumbled feta cheese. Season this mixture with freshly cracked black pepper to taste, ensuring a flavorful base for your flatbreads.

Assemble the Flatbreads: Place the rolled-out dough on a baking sheet or your preheated pizza stone. Spread a generous layer of the cheese mixture over each flatbread, leaving a small border around the edges. Carefully arrange the thin peach slices on top, then drizzle honey over the entire surface.

Bake: Place the assembled flatbreads in the oven and bake for 12-15 minutes, or until the edges are golden brown and the dough is cooked through.

Finishing Touches: Once baked, carefully remove the flatbreads from the oven and let them cool for a few minutes. Sprinkle fresh thyme leaves (or mint) over the top, followed by an additional drizzle of honey, freshly cracked black pepper to taste, and a pinch of crushed red pepper flakes if you desire a bit of heat.

Serve: Slice the flatbreads into pieces and serve warm. Enjoy your Peach Honey Flatbread as a delightful appetizer or a light meal that is sure to impress!
