Ingredients

1 cup long-grain white rice, rinsed

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) diced tomatoes with green chilies, undrained

1 cup vegetable broth (or chicken broth for added flavor)

1 medium onion, finely chopped

2 cloves garlic, minced

1 tablespoon olive oil

1 packet taco seasoning (about 1 ounce)

1 cup corn (fresh, canned, or frozen)

1 cup bell peppers, diced (any variety for color)

1 jalapeño, diced (optional, for those who enjoy heat)

1 cup shredded cheese (cheddar or Mexican blend)

1/4 cup fresh cilantro, chopped (for garnish)

Salt and pepper to taste

Lime wedges (for serving)

Instructions

In a large pot or deep skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until it becomes translucent and soft. Then, add the minced garlic and continue cooking for an additional minute, allowing the garlic to release its aroma.

Incorporate the diced bell peppers and jalapeño (if using) into the pot. Sauté them together for another 3-4 minutes until the peppers begin to soften and their colors brighten.

Add the rinsed rice to the mix along with the taco seasoning. Season with a pinch of salt and pepper. Stir everything together, sautéing for about 2 minutes to lightly toast the rice and infuse it with the seasonings.

Pour in the vegetable broth, undrained canned diced tomatoes, and the drained black beans. Stir to combine, then bring the mixture to a gentle boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes, or until the rice is fully cooked and has absorbed most of the liquid.

After the rice is cooked, use a fork to fluff it gently. Then, stir in the corn and half of the shredded cheese. Cover the pot once more and let it sit for 5 minutes, allowing the cheese to melt beautifully into the rice.

Give the dish a final stir, tasting for seasoning and adjusting with additional salt and pepper if needed. Sprinkle the remaining shredded cheese over the top and garnish generously with fresh cilantro.

Serve your delicious Taco Fiesta Rice & Beans hot, accompanied by lime wedges on the side for an exciting zesty burst!
