Ingredients

2 cups elbow macaroni

4 cups low-sodium chicken or vegetable broth

1 cup whole milk

2 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1/2 cup cream cheese, cubed

1 tablespoon butter

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1/2 cup breadcrumbs (optional, for topping)

2 tablespoons fresh parsley, chopped (optional garnish)

Instructions

Combine Ingredients: In a large pot, pour in the uncooked elbow macaroni and the low-sodium chicken or vegetable broth. Place the pot over medium-high heat and bring the mixture to a rolling boil.

Cook Macaroni: Once the broth is boiling, reduce the heat to medium. Continue to cook the macaroni for 8-10 minutes, stirring occasionally. Cook until the pasta is al dente, and the broth has reduced enough to create a creamy base.

Incorporate Dairy: Lower the heat further, then add in the whole milk, shredded sharp cheddar cheese, shredded mozzarella cheese, and cubed cream cheese. Stir continuously until all the cheeses have melted, and the mixture turns creamy and smooth.

Season: Introduce the butter, garlic powder, onion powder, and smoked paprika to the pot. Season with salt and freshly cracked pepper to taste. Stir well to meld all the flavors together.

Breadcrumb Topping (Optional): If you desire a crispy topping, preheat your oven to 350°F (175°C). Transfer the creamy mac and cheese into a greased baking dish. Evenly sprinkle breadcrumbs over the top, then bake in the preheated oven for 15-20 minutes, or until the top is a delightful golden brown.

Serve: When ready, garnish your dish with freshly chopped parsley for a vibrant touch. Serve warm, savoring every creamy, cheesy bite of this delightful meal!
